Beet Hummus!




Beet Hummus

Prep: 10 min    |      Total: 30 min
INGREDIENTS 

4 medium sized beets; washed, peeled, and cubed
1 lemon, juiced
2 small cans of chick peas (garbanzo beans)
healthy dose of salt (just a pinch) and black pepper 
2 tsp garlic powder
dried basil
Olive oil (1/4 cup)


METHOD 

Once beets are peeled and cubed, place in the steamer for about 20- 25 minutes. Once cooked (Should feel very tender) set aside and let cool. Once the beets are cooled, place them in the blender and mix well. Then add chickpeas and lemon juice and blend for another 5 minutes while adding the olive oil (you can just drizzle the olive oil over the hummus mixture as it mixes).  Last but not least, Season to taste! I prefer a little salt, pepper, garlic powder, and basil.
