Jackfruit BBQ Sandwiches

Jackfruit BBQ Sandwiches

Ingredients 
Jack fruit BBQ
2 (14) oz. Canned Jack Fruit
2 Tbsp brown sugar
1 tbsp garlic powder
1 tbs olive oil
BBQ sauce of choice
Water (for thinning)
Pepper
Whole Wheat buns
Cole slaw
1 pkg shredded cabbage and carrots
3/4 cup nonfat greek yogurt
3 tbsp apple cider vinegar
black pepper for seasoning 

Method

Rinse and drain canned jackfruit in a colander. Prepare the jack fruit by separating the 'flesh' from the seeds. There are lots of great videos on youtube if you need help doing this. Once jackfruit has been shredded and prepared, throw in a bowl. Add dry seasonings (brown sugar, garlic powder, and chili powder) to the jackfruit. Using a spoon, mix the seasonings with the jack fruit until well coated. Once the jackfruit is well coated with dry seasonings, add to a skillet and sauce in olive oil on medium heat until the dry spices become fragrant. Add BBQ sauce of your choice. (I try to find sauces with the least amount of added sugar). Stir the jackfruit on medium heat with the bbq sauce then add just enough water to thin the BBQ sauce. Stir for about 20 minutes then take off heat. Add pepper and other seasonings if you like. 

While the jack fruit cools, start your coleslaw. Simply add one bag shredded cabbage and carrots to a bowl. Add greek yogurt, vinegar, and black pepper for seasoning. Mix around! Place jackfruit bbq on bun then add cole slaw on top. Feel free to add anything that you like at this point. I served mine with fresh greens so that I could say I ate fruits and veggies for dinner! :) Good luck and happy cooking!!
